Coconut Ice Cream

Ingredients:

  • 1 fresh coconut that has thick meat
  • 2 tablespoons of coconut, freshly grated
  • 1.5 liters of milk
  • 1 can of condensed milk
  • 1 teaspoon vanilla essence
  • 5-6 tablespoons sugar
  • 1 tablespoon sugar to top

Instructions:

  1. Grate the fresh coconut, dividing it into two portions.
  2. Add four tablespoons of milk to one portion of the coconut, blending the mixture.
  3. Squeeze the milk out of the other half of the coconut and strain it through a thin cloth such as cheesecloth.
  4. Add the coconut milk, condensed milk, sweetened milk and vanilla to the blended coconut mixture, adjusting the sweetness with sugar as desired.
  5. Add lemon juice if it becomes too sweet.
  6. Run the mixture through an ice cream churner according to your machine’s instructions.
  7. To serve, heat two tablespoons of fresh coconut until it is slightly pink and sprinkle on the ice cream.
  8. You can also cook the fresh coconut until it is slightly caramelized before topping.

  • 1 ¼ cups of chilled coconut water
  • 1 cup of coconut meat
  • 1 cup roughly chopped chilled papaya

Instructions:

  1. Blend all of these ingredients until they create a smooth mixture and serve immediately.
  2. This drink should not be made in a juicer as it could clog the hopper of this appliance.

Coconut Tpioca Salad

Ingredients:

  • 6 pieces of cubed coconut meat
  • 5 ounces of unflavored gelatin
  • 4 cups coconut juice
  • 1 cup half and half
  • 1 can of sweetened condensed milk to taste
  • 250g of tapioca

Instructions:

  1. 1Cook the gelatin in the coconut juice according to the package instructions. The cooking time will vary based on how firm you would like the finished gelatin to be.
  2. Allow the gelatin to cool completely and then cube the mixture, setting aside these cups for later.
  3. Boil the tapioca until it is transparent, then drain. This should take around 20 minutes.
  4. Combine the half and half with the sweetened condensed milk, tasting and adjusting to your desired sweetness.
  5. Mix in the cubed coconut, gelatin cubes and tapioca prepared earlier. Ensure that all ingredients are well blended and allow this mixture to chill for at least 6 hours before serving.
  6. This recipe should be served cold.

Mexican Roll-Up Tortillas

Ingredients:

  • 8 large tortillas
  • ¼ cup coconut meat
  • 2 tablespoons soya sauce
  • 2 tablespoons olive oil
  • ¼ teaspoon sambal tjampoer or chili sauce
  • 500g fresh or frozen fish fillet
  • 1 onion
  • 3 tablespoons desiccated coconut
  • 2 teaspoons corn flour or cornstarch,
  • 2 tablespoons sugar
  • 1/3 cups tomato sauce
  • ¼ teaspoon salt
  • 2 tablespoons white vinegar
  • 1 tablespoon soy sauce
  • grated cheese for topping

Instructions:

  1. Combine the sugar, salt, corn flour, white vinegar, tomato sauce and soy sauce to make a sweet and sour sauce.
  2. Sauté the onion in the olive oil, adding the sweet and sour sauce and soy sauce after it is finished cooking.
  3. Add the fish, coconut meat and desiccated coconut. You may wish to add more soy sauce to balance the sweetness. Allow this mixture to simmer for 15 minutes.
  4. Place spoonful of the fish mixture onto the center of a tortilla, tucking in the ends while you roll up the package.
  5. Line up the finished burritos on an oven safe dish and cover with cheese.
  6. Place them in a 20 C oven for around 20 minutes or until the burritos are hot.
  7. Serve these warm with white rice or fresh salad.
